In 1844, one of Melbourne’s first public houses, the Apollo Inn, opened on the corner of Flinders Lane and Russell Street - the site on which Gimlet at Cavendish House resides today. A few doors down on the corner of Hosier Lane, the new Apollo Inn now stands. Hidden behind leather doors within the 1920s neo-renaissance-style building, Apollo Inn is an intimate space that takes its cues from the timeless cocktail bars of Europe.

The first standalone cocktail bar from Andrew McConnell and Jo McGann, Apollo Inn joins Gimlet at Cavendish House in the Trader House family of venues. Trader House includes some of Melbourne’s most iconic and critically acclaimed establishments; they embody the values and culinary culture of Melbourne.

A considered cocktail list pairs old-world classics with new-world sensibility, all overseen by former Gimlet Bar Manager Cameron Parish. Like every great cocktail bar, the mark of quality will reside in the martini glass, with four styles to choose from; Dry, Dirty, Gibson, and Café. Apollo Inn’s menu complements its refined atmosphere, offering a selection of drinking food from classic beef carpaccio to shellfish served over ice.
