THE ARCHIVE LIST

On your next visit to Apollo Inn, you'll find an addition to our menu - the Archive List.
A collection of the many excellent distilleries in our own backyard, the Archive List celebrates them and their vintage releases with our take on historic cocktails.

Victoria has a long and prestigious history of distilling which has inspired a new guard over the last couple of decades. We have the privilege of telling the story of Maidenii, The Gospel, Four Pillars and Marionette through rare, museum and never-seen-before distillations. Each has their own story to tell - whether a startup making Moonshine, a childhood on a third-generation vineyard in Burgundy, or the bond of friendship over quality gin.

For the rest of winter, join us for an Archive cocktail, or a nip of one of these rare distillations and let us tell you about their story.

CORPSE REVIVER NO. 2
Tracing back to the 1870’s, the Corpse Reviver No. 2 is a classic drink that belongs to a family of pre-prohibition cocktails. These were said to be created and consumed for the chief purpose of rousing the drinker from the dead—in other words, meant to cure hangovers, increase vigour and otherwise improve one’s morning.

Our interpretation is made with 2022 Four Pillars Cumquat Gin, Marionette 4yo Cask Strength Curaçao, 2017 Kina Vermouth and Forêt Pastis.

BROOKLYN
The Brooklyn first appeared in print in 1908, in Jacques Straub’s Drinks. It's a Manhattan variation that calls for Picon, dry vermouth and Luxardo Maraschino.

Our take features 2022 The Gospel Vermouth Cask Rye, alongside 2017 Maidenii Dry Vermouth, Marionette Groseille and 2014 Solera Nocturne Vin Amer.

NAPOLEON’S OWN
From the absorbing 1896 Parisian tome, Bariana: Recueil Practique et Tous Boissons Americaines et Anglaises by Louis Fouquet.

A refreshing nod to this historic character (who wasn't much of a drinker himself), ours is made with 2020 Melbourne Moonshine Single Cask Corn Bill alongside 2022 Four Pillars Rarest of Rare Bergamot Gin, verjus & soda.

MARTINEZ
The Martinez marks the split between sweet and dry cocktails. It descended from the Manhattan and led to the Martini. First published in O.H. Byron’s The Modern Bartender in 1884, Byron states that it's “the same as Manhattan, only you substitute the whisky for gin.”

Ours is made with Maidenii Roselle, Maidenii Classic Vermouth and 2018 Four Pillars Bloody Shiraz Gin.

On until they're gone.
