​​​New to our list, this cocktail boasts the best of summer berries and inspires celebration with a Grand Cru Champagne finish. It's our take on the classic Russian Spring Punch which was devised in 1980s London by a bartender who wanted to invigorate a Kir Royale.

We make our own cassis with Yarra Valley berries, infuse vodka with passionfruit, and freeze NV Jean Paul Deville Carte Noir Champagne into a granita, shave and serve with a spoon.

Drink this as your welcome drink or have it towards the end of your visit - perhaps after a slice of créme caramel.
